Blenders are equally important in daily kitchen life. We use our Vitamix regularly. However for this job, the Magic Bullet is a handly tool perfect for salad dressing blending.

Recipe

Blend the follow items until thick and creamy. Add water by the teaspoon if mixture becomes too thick to blend. Put the dressing aside to marinate.

Blend

  • 1/2 cup raw pumpkin seeds
  • 1/2 tsp liquid aminos
  • 2 tbsp tahini
  • 1 tsp miso paste
  • 1/4 cup olive oil
  • 2 tbsp nutritional yeast
  • 1/4 cup fresh lemon juice – about 2 squeezed lemons
  • 1 tbsp apple cider vinegar
  • 1 tsp crack pepper

Toast

Toast 1/4 cup pumpkin seeds. Toast either plain or toss in a tiny bit of olive oil to bring out the toasted flavor. Place on a tray in the oven or a toaster oven. Toast or broil for only a few minutes. Pumpkin seeds will brown quickly. Keep a close watch on them. Transfer toasted pumpkin seeds to a plate to cool.

Chop and Toss

Chop 4-5 large romaine leaves and a few handfuls of baby spinach and kale mix. Grate 1/3 of a cucumber. Chop 3-4 stalks and leaves of cilantro. Toss the salad ingredients until well mixed. Start adding the vegan Caesar dressing by the spoonful and toss until salad mixture is well covered in dressing. Again, if the dressing is too thick, just add a teaspoon of water at a time to smooth it out.

Additions

This salad recipe provides either two large salads or four small side salads. This delicious vegan Caesar salad dressing however will probably give you enough dressing for another salad. Consider adding 1/2-1 cup of cooked quinoa if you are interested in making a meal of the salad. Grate in a carrot for a splash of color.
